Cheese scones
These savoury Cheddar scones are crisp outside, tender inside and best eaten warm.

Ingredients
- 250 gself-raising flour, plus 10 g for dusting
- 1 tspbaking powder
- ½ tspmustard powder
- 50 gbutter, cold and cubed
- 125 gmature Cheddar, grated
- 150 mlmilk, plus 10 ml for brushing
- ¼ tspsalt

Method
- 1.
Heat the oven to 200°C fan and line a baking tray with baking paper.
- 2.
Mix 250 g flour with the baking powder, mustard powder and salt. Rub in the butter until the mixture resembles fine crumbs.

Stir in 100 g cheese, then gradually add the milk, stopping when you have a soft, slightly tacky dough.
3 minutes - 4.
Lightly dust the worktop with the extra flour. Pat the dough into a round about 2.5 cm thick and cut into eight wedges.
3 minutes - 5.
Transfer to the tray, leaving gaps. Brush with the extra milk and scatter over the remaining cheese.
2 minutes - 6.
Bake for 12–15 minutes until risen and golden. Transfer to a wire rack and serve warm.
