Make
Method
- 1.
Heat the oven to 220°C (200°C fan). Put the chips in a saucepan of boiling water and simmer for 5 minutes, then drain and let them steam dry for 2 minutes.
7 minutes - 2.
Toss the chips with 1½ tablespoons of the oil and the pepper. Spread over a large baking tray and roast for 35–38 minutes until golden, turning halfway through.
38 minutes - 3.
About 15 minutes before the chips are ready, heat a non-stick frying pan over a medium heat. Fry the gammon for 5–6 minutes on each side, or until cooked through to 75°C, then keep warm.
12 minutes - 4.
Heat the remaining oil in the frying pan and fry the eggs for 3–4 minutes, until the whites are set. Meanwhile, boil the peas for 3 minutes and drain.
4 minutes - 5.
Serve each gammon steak topped with an egg, with the chips and peas alongside.
