Jacket potatoes with beans and cheese
Crisp-skinned baked potatoes are filled with hot baked beans and melting Cheddar.

- 2large baking potatoes, about 300 g each, scrubbed
- 1 tspolive oil
- ¼ tspsalt
- 1 tinbaked beans, 415 g
- 20 gbutter
- 80 gvegetarian Cheddar, grated

Method
- 1.
Heat the oven to 220°C, or 200°C fan. Dry the potatoes and prick them several times with a fork.
3 minutes - 2.
Rub the potatoes with the oil and salt, then bake on a tray for 70–80 minutes until the skins are crisp and the centres feel soft when pierced.
80 minutes - 3.
Towards the end of baking, warm the beans in a saucepan over a low heat, stirring regularly.
5 minutes - 4.
Split the potatoes, fluff the centres with a fork and add the butter. Spoon over the beans and finish with the cheese.
2 minutes
