Lamb rogan josh
Slow-simmered lamb in a warmly spiced tomato sauce makes a straightforward home-style rogan josh.

Ingredients
- 600 gboneless lamb shoulder, trimmed and cut into 3 cm pieces
- 1 tbspvegetable oil
- 2onions, thinly sliced
- 3 clovegarlic, finely chopped
- 20 gfresh ginger, grated
- 4 tbsprogan josh curry paste
- 400 gtinned chopped tomatoes, including juice
- 300 mlwater
- 100 gfull-fat natural yoghurt, brought to room temperature

Method

Heat the oil in a heavy-based saucepan over a medium-high heat. Brown the lamb in two batches for 4 minutes each, then transfer to a plate.

Reduce the heat to medium. Add the onions and cook for 8 minutes, adding a splash of the measured water if they stick.
8 minutes - 3.
Stir in the garlic, ginger and curry paste and cook for 2 minutes.
2 minutes - 4.
Return the lamb and its juices to the pan. Add the tomatoes and remaining water and bring to a gentle simmer.
2 minutes - 5.
Cover and simmer gently for 75 minutes, stirring occasionally. Uncover and cook for another 15 minutes until the lamb is tender and the sauce has thickened; add more water and cook longer if needed.
90 minutes - 6.
Take the pan off the heat. Mix a spoonful of sauce into the yoghurt, then stir the yoghurt mixture into the curry.
