Layers of beef and tomato sauce, pasta and creamy cheese sauce make a comforting homemade lasagne.

Ingredients
- 1 tbspolive oil
- 1onion, finely chopped
- 500 gbeef mince
- 2 clovegarlic, crushed
- 800 gtinned chopped tomatoes
- 2 tbsptomato purée
- 1 tspdried oregano
- 50 gbutter
- 50 gplain flour
- 700 mlmilk
- 150 gmature Cheddar, grated
- 250 gdried lasagne sheets

Method
- 1.
Heat the oven to 200°C, 180°C fan. Heat the oil in a large saucepan and soften the onion for 5 minutes.
5 minutes - 2.
Add the mince and fry, breaking it up, until browned. Stir in the garlic and cook for a further minute.
7 minutes - 3.
Add the tomatoes, tomato purée and oregano. Simmer gently for 15 minutes, keeping the sauce fairly loose.
15 minutes - 4.
Meanwhile, melt the butter in another pan and stir in the flour. Cook for 2 minutes, then gradually whisk in the milk and simmer until thickened. Remove from the heat and stir in 100 g of the cheese.
10 minutes - 5.
Spread a third of the meat sauce in a deep baking dish. Add a layer of pasta and a third of the cheese sauce. Repeat twice, finishing with cheese sauce, then scatter over the remaining cheese.
5 minutes - 6.
Bake for 35–40 minutes until bubbling and the pasta is tender. Rest for 10 minutes before cutting into portions.
