Lemon olive oil cake

- 200 gcaster sugar
- 3eggs
- 150 mlextra virgin olive oil
- 2lemons, zested, one juiced
- 200 gplain flour
- 2 tspbaking powder
- 1 pinchfine salt
Make
Method
- 1.
Heat the oven to 175°C and line a 20cm cake tin.
5 minutes - 2.
Whisk sugar and eggs until pale. Slowly whisk in olive oil, lemon zest and juice.
5 minutes - 3.
Fold in flour, baking powder and salt until just combined.
3 minutes - 4.
Pour into the tin and bake until golden and a skewer comes out clean.
40 minutes - 5.
Cool for ten minutes before turning out. Dust lightly with icing sugar.
