Light, buttery scones that are lovely served warm with jam and cream.

Gather

Ingredients

  • 350 gself-raising flour, plus a little for dusting
  • 1 tspbaking powder
  • ¼ tspsalt
  • 85 gunsalted butter, cold and cubed
  • 40 gcaster sugar
  • 175 mlmilk, plus 1 tbsp for brushing
  • 1 tspvanilla extract

Method

  1. 1.

    Heat the oven to 220°C/200°C fan and line a baking tray with baking paper.

    Mix the flour, baking powder and salt. Rub in the butter with your fingertips until the mixture resembles fine breadcrumbs, then stir in the sugar.

    Mix the milk and vanilla, then stir into the dry ingredients with a table knife to make a soft dough.

    Turn onto a lightly floured surface and gently pat to 3 cm thick. Cut out rounds with a 6 cm cutter, gathering the trimmings gently to make about 8 scones.

    Place on the tray, brush the tops with the extra milk and bake for 12–15 minutes, until risen and golden.
