Sweet and sour chicken
Pan-fried chicken, pepper and pineapple are tossed in a tangy sauce without the need for deep-frying.

Ingredients
- 500 gchicken breast, cut into 2 cm pieces
- 2peppers, deseeded and cut into chunks
- 1onion, cut into chunks
- 200 gtinned pineapple chunks in juice, drained weight, juice reserved
- 100 mlpineapple juice, from the tin
- 3 tbsptomato ketchup
- 2 tbsprice vinegar
- 1 tbspreduced-salt soy sauce
- 1 tbspbrown sugar
- 2 tspcornflour
- 1 tbspvegetable oil

Method
- 1.
Whisk the pineapple juice, ketchup, vinegar, soy sauce, sugar and cornflour together until smooth.
2 minutes - 2.
Heat the oil in a large frying pan over a medium-high heat. Fry the chicken for 7 minutes, turning frequently, until lightly golden.
7 minutes - 3.
Add the onion and peppers and stir-fry for 5 minutes.
5 minutes - 4.
Add the pineapple chunks. Stir the sauce again and pour it into the pan, then bring to a gentle bubble.
2 minutes - 5.
Cook for 5–6 minutes, stirring, until the sauce is glossy and the chicken is cooked through with no pink remaining.
