Pork sausages bake in a crisp, puffed Yorkshire pudding batter.

Gather
Ingredients
- 8pork sausages, about 500–600 g in total
- 2 tbspvegetable oil
- 150 gplain flour
- 3eggs
- 200 mlmilk
- ¼ tspsalt
- ¼ tspblack pepper
Make
Method
- 1.
Heat the oven to 220°C, or 200°C fan. Put the sausages and oil in a metal roasting tin and turn to coat.
- 2.
Roast the sausages for 15 minutes, turning halfway through.

Meanwhile, put the flour, salt and pepper in a bowl. Whisk in the eggs and gradually add the milk to make a smooth batter. Leave to stand while the sausages roast.
- 4.
Carefully take out the hot tin and immediately pour the batter around the sausages. Return it to the oven straight away.
- 5.
Bake for 30 minutes without opening the door, until risen, deeply golden and set in the middle. Check the sausages are cooked through, reaching 75°C in the centre, and serve promptly.
