Pan-fried pork chops are paired with soft apple wedges and a creamy mustard sauce.

Ingredients
- 2pork chops, about 200 g each
- 1 tbspolive oil
- 15 gbutter
- 2eating apples, cored and cut into wedges
- 1onion, thinly sliced
- 150 mlchicken stock
- 1 tspwholegrain mustard
- 75 mldouble cream
- ½ tspdried thyme

Method
- 1.
Heat the oil in a large frying pan. Brown the chops over a medium-high heat for 3 minutes on each side, then transfer to a plate.
6 minutes - 2.
Lower the heat slightly and add the butter, apples and onion. Cook for 8 minutes, turning the apple wedges gently, until lightly golden.
8 minutes - 3.
Stir in the stock, mustard, cream and thyme. Return the chops and any juices, then simmer gently for 6–8 minutes until the pork reaches 75°C in the thickest part, away from the bone.
8 minutes - 4.
Lift the chops onto warm plates to rest briefly. Simmer the sauce for 3 minutes to thicken, then spoon the apples and sauce over the pork.
